Warm Chicken & Quinoa Salad

🧾 Ingredients

For the Salad

  • 1 cup quinoa, uncooked
  • 2 cups water or low-sodium chicken broth
  • 2 chicken breasts (grilled, baked, or pan-seared)
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 2 cups baby kale or spinach
  • 2 tbsp olive oil
  • Salt & black pepper, to taste

For the Lemon Dressing

  • 3 tbsp extra-virgin olive oil
  • 1½ tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 small garlic clove, minced
  • Salt & pepper, to taste

👩‍🍳 Instructions

  1. Cook the Quinoa: Rinse. Boil with liquid. Simmer 12–15 mins. Fluff.
  2. Cook the Chicken: Season and cook until golden (165°F). Slice.
  3. Roast Vegetables: Toast broccoli & carrots with oil/S&P at 400°F (200°C) for 15–18 mins.
  4. Make Dressing: Whisk oil, lemon, dijon, garlic, S&P.
  5. Assemble: Combine warm quinoa, veggies, chicken, and greens. Toss with dressing.
